RumCow in Downtown Wilmington: Craft Cocktails, Shrimp & Grits Tacos and One Very Famous Cow

Some restaurants you pick for the food, some for the drinks, and some because there’s a six-foot painting of a cow with a rum bottle balanced on its nose. RumCow on Grace Street is all three. It’s downtown Wilmington’s quirky little craft-cocktail dinner spot — white shiplap, local art, a bar team that treats a drink order like a conversation — and it just earned its card in my Wilmington restaurant guide.

The short version: RumCow is dinner-plus-cocktails at 121 Grace Street downtown, a block off the Riverwalk. I popped in solo, grabbed a bar seat, and ordered the shrimp and grits tacos and the crispy shrimp appetizer — both delicious — and the Smokey Cortes (mezcal, pineapple juice, ginger beer, fresh lime) is the drink I’m still thinking about. My tab ran about $60–70, and that included pork sliders to go for my son. Dinner only, closed Sundays.

Why it made the list after one visit

RumCow is small, loud in the fun way, and completely itself. The menu hops around the globe — tacos next to Asian-fusion bites next to Southern comfort — and somehow it all hangs together, because the kitchen treats every plate like bar food that went to culinary school. Meanwhile the cocktail list reads like a beach vacation: Painkillers, Mai Tais, daiquiris, and a page of house creations built on good rum, mezcal and fresh juice.

The cow. The rum. The cocktail. You understand the name now.

My first visit was a happy accident. My husband and our son were running sound for a show down on Front Street, I was hungry, and I decided to pop into somewhere I’d never been. I grabbed a seat at the bar right as they opened, and Chris behind the bar made the whole night — he asked all the right questions about what I like to drink, made solid suggestions, and when I mentioned I love a pineapple drink, he whipped one up for me on the spot. Service was 10/10 (fair warning: I was there early, so I can’t promise every night is that unhurried — but that kind of hospitality doesn’t happen by accident). I left wishing I had all four of the cow’s stomachs, because I wanted to try so much more of the menu. And the thing that surprised me most? The crispy grit cake tucked inside the taco. I’ve had shrimp and grits a hundred ways in this town — never like that.

What to order

The shrimp and grits tacos are the move: blackened shrimp and a crispy grit cake folded into soft tortillas with chimichurri on top — a very Wilmington idea executed way better than it has any right to be. Start with the crispy shrimp appetizer, fried golden and drizzled with aioli and sweet peppers; it disappears fast.

Grabbing something for someone else? The kitchen does takeout too. I picked up the pork sliders to go for my son. And from the cocktail page, order the Smokey Cortes — mezcal, pineapple juice, ginger beer and fresh lime — smoky, bright and dangerously drinkable. And here’s the real pro move: tell the bartender what you like. That’s how I ended up with a bonus off-menu pineapple creation I’d order again in a heartbeat — this bar team knows what it’s doing.

The cocktail list deserves its own paragraph

Half the fun of RumCow is handing someone the cocktail menu and watching them take ten minutes to decide. Margaritas in cucumber, spiced peach and strawberry-coconut. Tiki classics done properly. Local honey and muddled fruit all over the page. If mezcal isn’t your thing, the Painkiller and the Dark and Stormy are both made the right way — but I’m telling you, the Smokey Cortes is the one.

If you’re moving downtown

Grace Street sits in the walkable heart of it all, minutes from the river, Thalian Hall and every coffee shop worth knowing. If historic porches and walk-to-dinner evenings are your thing, my downtown Wilmington guide covers the streets, the quirks of historic homes and what they actually cost.
